Chicken Tortilla Soup Recipe + This Weekend’s Winners
So this is going to be a crazy week – followed by another crazy week. I need to spend some time cooking ahead so that the troops around here can eat. Trying to find recipes that will fill everyone up (three teenagers with the appetites roughly equivalent to those of professional football players) is a challenge, but this is one of Roger’s favorites- so maybe your guy will love it, too. First Give-Away of the Week – The Frozen Gourmet
It was suppose to be a beautiful “lay-around-the-house-after-church” Sunday yesterday. That is until the car thermometer hit 95 degrees. Ugh. Too hot and sticky to lay around.
So Roger and I decided to go out for dinner – hit an air conditioned restaurant and cool off. So we went out – and once we ordered our Grilled Polenta appetizers we realized that we picked the only restaurant in modern America that did not have air conditioning. Double Ugh.
So in celebration of hot-sticky weather, I am sharing one of my favorite Frozen Gourmet Recipes that’s perfect for BBQing. (Oh, and if you are like my agent who Twittered about how the sun was gleaming off the snow in Colorado this morning, this recipe is great for the oven as well…)

Teriyaki Chicken
We make this marinade again and again – it is much better than any prepared marinade you can find in the store.
4 each Chicken legs and thighs (or use six chicken breasts)
1/2 cup Soy sauce
3 tbs Honey
1 tsp Grated, fresh ginger
2 tbs Dry sherry (optional)
1 clove Garlic, minced
2 Green onions, thinly sliced
1. Prepare: Place the chicken in a gallon plastic bag. Mix the remaining ingredients together in a bowl. Pour the mixture over the chicken. Seal the bag.
2. Freeze: Place your bag in another gallon bag and lay flat in the freezer.
3. Serve: Defrost the chicken. Pour off marinade and bake chicken in a pan at 350° for 30- 40 minutes, (or until no longer pink in the center.)
Servings: 4
Making His Day – The Toll House Way
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups (12-oz. pkg.) chocolate chip morsels
Directions:
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Project Support: Weekly Recipe — Chocolate Dipped Fruit
Just in time for Valentine’s Day, a recipe sure to please. Delicious, yummy chocolate over sweet succulent fruit. A sure fire way to get you licking your fingertips…and who knows what else?
CHOCOLATE – DIPPED FRUIT
1 (11 1/2 oz.) pkg. (2 c.) Nestle milk chocolate morsels
1/4 c. vegetable shortening
Strawberries, grapes, bananas, apples, kiwi, or pineapple
Melt over hot (not boiling) water Nestle milk chocolate morsels and shortening; stir until smooth. Remove from heat, but keep over hot water. (If chocolate thickens, return to heat; stir until smooth.) Dip pieces of fruit into chocolate; shake off excess. Place on foil-lined cookie sheets. Chill 10-15 minutes until chocolate is set. Peel off foil. Fruit may be kept at room temperature up to 1 hour. If chocolate becomes sticky, return to refrigerator. Makes 1 cup melted chocolate.
In microwave, melt on high 1 minute; stir. Repeat.

Deluxe Chicken Breasts – Nothing fancy, just tender, cheese-sauced chicken breasts that are good enough to add to your list of weekly specials.

Prep Time 30 minutes
Cook Time 15 minutes
Serves 4
Ingredients:
1/2 cup all-purpose flour
1/4 cup dry bread crumbs
2 egg whites, lightly beaten
2 tablespoons water
4 boneless, skinless chicken breast (approx 4 oz each)
2 tablespoons vegetable oil
For the Sauce:
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup skim milk
1/2 cup shredded cheddar cheese
Preheat oven to 350 degrees. Combine flour and bread crumbs in a shallow flat dish. In a shallow bowl, whisk together egg whites and water. Dip chicken in egg white water mixture, then dredge in bread crumb mixture, turning to coat. In large skillet, heat oil over medium high heat. Add chicken; cook, turning once, until browned about 10 minutes (5 minutes on each side). Place chicken in a lightly greased shallow baking dish. Bake at 350 until cooked through, approx 15 minutes.
To prepare sauce, in a small saucepan over medium heat melt butter. Stir in flour until well combined. Slowly add milk, stirring constantly. Cook, stirring, until thickened about 8-10 minutes. Remove from heat; stir in cheddar cheese. (The heat of the sauce will melt cheese)
Place chicken breasts on serving tray. Drizzle with sauce. Serve immediately. Mmmmm!

This recipe is from a delightful B&B where Roger and I once stayed. It’s a tasty morning treat, and certainly hearty enough for a man’s appetite. Hope you enjoy it as much as we did. ~ Kathi
Ingredients:
2 1/2 cups frozen shredded hash brown potatoes, or Tater Tots
3/4 cup shredded Monterey Jack with (optional) jalapeno peppers
1 pkg. Knorr Leek recipe mix
1 cup chopped fully cooked ham or Canadian bacon (optional)
1/4 cup sliced green onion
4 eggs beaten or 1 cup egg substitute
1 – 12 oz. can evaporated milk (or 1 ½ cups evaporated skim milk)
1/4 tsp. pepper
1/8 tsp. salt
1/2 lb. asparagus or mushrooms, washed and cut into 1″ pieces
4 to 5 tomatoes, coarsely chopped
Spray a 2-quart square baking dish with Pam or other cooking spray. Arrange potatoes evenly in the bottom of the dish. Sprinkle cheese, ham, green onion over all. In a mixing bowl combine eggs, milk, pepper, salt, soup mix. Pour over mixture in baking dish. Sprinkle with Crazy Jane’s salt and/or Mrs. Dash. Cover with foil or plastic wrap and refrigerate overnight. Next morning bake uncovered at 350 for 1/2 hour. Remove from oven; add asparagus or mushrooms and tomatoes. Bake for another ½ hour until golden brown. Let stand 5 minutes before serving.

It seems there are few things more pleasing to a man than a delicious meatloaf. But, not knowing if your man likes the good, old-fashioned style meatloaf, or something a little more gourmet, we’re providing two recipes to make sure you can please your guy:
Quaker Oats Prize Winning Meatloaf
Ingredients:
1 1/2 pound ground beef
3/4 cup oats, uncooked
1/4 cup onion, chopped
1 1/2 teaspoon salt
1/4 teaspoon pepper
1 cup tomato juice
1 egg, beaten
Directions:
Combine all ingredients and pack firmly into an ungreased loaf pan. Bake in a preheated 350° oven for 1 hour and 15 minutes. Let stand 5 minutes before slicing. Serves 4.
Meatloaf with Spinach, Sun-dried Tomatoes & Gorgonzola
Meat Mixture:
1 1/2 lb. lean ground beef
1/2 lb. lean ground pork
1 C soft breadcrumbs
1 egg
1 tsp. salt
1/2 tsp. black pepper
Filling:
4 C fresh spinach, washed and dried
1 C gorgonzola cheese, crumbled
1/2 C thinly sliced sun-dried tomatoes
Sauce Topping:
1 C ketchup
2 T brown sugar, packed
2 T chopped sun-dried tomatoes
Preheat oven to 350°. Combine the beef and pork, breadcrumbs, egg, salt and pepper. Lightly blend. Press 1/2 of the mixture in the bottom of a 9″x5″ loaf pan. Down the center, top with spinach, then cheese and finally the sun-dried tomatoes. Leave a small border of meat around the edge. Top with the remaining meat mixture, enclosing the filling and sealing the edges. Blend sauce topping ingredients and spread on top. Bake for 1 hour, till top is brown . Remove from oven and let stand for 10 minutes before removing from pan and slicing into 1″ slices.
