Fidtebrod (Danish Shortbread)
By “Besta” Laura Beck (my great grandmother)

2 2/3 c. Flour
½ lb. Butter (melted)
1 c. Sugar
2 c. Powdered Sugar
½ lb. Coconut (shredded)
¼ c. Water

Preheat oven 350*. Combine melted butter and sugar. Add flour and coconut. Roll on board to make a log until the size of a thumb. Place on greased cookie sheet. Press with palm until 2” wide. Bake at 350* for 10-12 minutes, lightly browned edges. Frost right away on cookie sheet. Cut into long slices before cool. Work fast or place back in oven for a few seconds to make it easier to work with. Remove from cookie sheet and allow to cool completely before packaging.
